But when the French government took over the administration of the monasteries in the early 1800s, there was great concern for the safety and security of the supplies of beer which were being brewed. To avoid this, the French government decided that a factory would be built at the Abbey of Notre Dame d’Ardenne in the Ardennes region to produce beer on a commercial scale. The government approached the Trappist monks and asked them to transfer their whole production of beer from the monastery breweries to the new factory. To increase the scale and productivity of the brewery and ensure that quality would not be compromised, the monks agreed to this. However, the new project soon ran into problems and the monks sought the help of a local priest, Fr. Antoine Delagarde. Delagarde had previously been a primary teacher at the Trappist monastery of Abbaye Notre Dame de Solesmes. After 4 years of training with the monks and abbess at Solesmes, Fr. Delagarde then transferred to the Trappist Abbey of Notre Dame d’Ardenne, where he was appointed the assistant brewer. Shortly after his arrival, the local priest started to work with the monks and abbess to design a new brewery that was both large and efficient enough to handle the increasing quantities of beer being brewed. The Abbot and the monks had reached a complete agreement that the new brewery should be built on the site of the old brewery, which was also a few hundred metres away from the monastery itself.
